How Smoke Trout

| Add some sawdust to one of the trays. You do not need a lot so be careful not to use too much. Of course you can buy Hickory chips etc. if you want but I can never tell the difference in the finished article. The sawdust being used here is *pet bedding of the non—medicated variety but feel free to buy the expensive stuff if you prefer! *Don't take this out of the kids hamster cage, always use new sawdust! |

| Put the fillets on the cake tray and over the sawdust (this fillet was too big to fit without cutting). Cover with a second dish and put on to your chosen cooker. If you are doing this on the grass then put everything on bricks to avoid burn marks. | ![]() |

| You will see some holes in the "lid" this is to allow the moisture from cooking to escape. Without these holes water will collect on the inside of the "lid" where it will drip back onto the fish giving it a bitter taste from the tar it collects. Although it was raining the air was fairly still, it is a good idea to use a sheltered area well out of the wind otherwise cooking will take much longer. | ![]() |

| Once cooked (15/20 mins) remove the "lid" and allow the fillets to cool. A pair of rigger gloves is handy for this operation! For the benefit of readers in the USA that's because the tins will be hot! | ![]() |

| The tins will need to be cleaned well, they will have salt on them and with the heat it will accelerate any corrosion. A pair of tins usually last a season. | ![]() |

| Allow to cool and serve, some new potatoes and a glass of beer is all that's missing, enjoy. The idea behind this article is to dispel the myth that some complicated stainless steel contraption with specialist (read expensive) sawdust is required. I really do encourage you all to have a go; it's my favourite way of eating the catch. I have put the trays and cooker on the site should you not have the bits required. |
